Eric woke up this morning craving for that NYC taste and as a good wife I got in the car and went to the grocery store to search for the ingredients. The avocados weren't as ripe as i like but the dish turned out great.
2 ripe Haas Avocados finely chopped
2 plum tomatoes seeded and chopped
1 small white onion chopped
a handful of cilantro chopped
1-2 jalapenos chopped
salt and pepper to taste
Mix first 5 ingredients in a large bowl until incorporated, season with salt and pepper to taste. Squeeze lime juice all over for taste and to keep avocados from turning brown.
Enjoy it with your favorite mexican meal or just with corn tortilla chips.
