If you don't have a wok, just use a large round frying pan that has a lid.
1 tablespoon of oil
1 lb of boneless chicken breast, washed, pat dried and cut into chunks
1 head of broccoli, cut into small pieces
1 large white onion, chopped
1 can of corn
25 baby carrots, sliced in half
1 small box of white mushrooms, sliced
4-5 tablespoons of low sodium soy sauce
Heat a dry frying pan or Wok on high heat. Pour oil and onions. Add chicken and stir for 5 minutes.
Add vegetables and soy sauce. Stir and cover and let the veggies cook with the steam for about 10 minutes. Serve with white rice or noodles.
