Chicken Stir-Fry

Stir-Fry is the perfect easy to cook meal and it's also good for you, the meat and vegetables are cooked on high heat and then steamed very quickly and with very little oil.
If you don't have a wok, just use a large round frying pan that has a lid.

Ingredients:
1 tablespoon of oil
1 lb of boneless chicken breast, washed, pat dried and cut into chunks
1 head of broccoli, cut into small pieces
1 large white onion, chopped
1 can of corn
25 baby carrots, sliced in half 
1 small box of white mushrooms, sliced
4-5 tablespoons of low sodium soy sauce

Heat a dry frying pan or Wok on high heat. Pour oil and onions. Add chicken and stir for 5 minutes. 


Add vegetables and soy sauce. Stir and cover and let the veggies cook with the steam for about 10 minutes. Serve with white rice or noodles.
