Added a few vegetables and dressing and it came out very good.
I did 3 pieces of chicken per package but you can do just 1. And used frozen asparagus but you can use any vegetable, frozen or fresh.
2 large square pieces of foil
2 large chicken breasts sliced into 3 pieces each
1 cup italian dressing
2 red potatoes, thinly sliced
1 small onion, thinly sliced
1 lemon, thinly sliced
20 asparagus spears, frozen or fresh
salt and pepper
handful fresh basil and parsley, chopped
Lay foil pieces on counter. Pour 1/2 cup of italian dressing into 2 foil pieces. Lay chicken breasts on top of dressing. Lay potatoes on top of chicken. Sprinkle salt and pepper on top. Place onions, tomatoes, lemon slices and asparagus on top of potatoes. Pour remaining 1/2 cup of dressing on top of veggies. Sprinkle fresh herbs on top. Fold and seal aluminum foil packets. Refrigerate for 1 hour.
Preheat grill to medium high. Cook chicken for 20-25 minutes.
Be careful when opening foil packets as the steam will burn you.
