Rigatoni wit Chicken Sausage, Peppers, Corn and Collards

Today is the day after Thanksgiving and since we didn't host a dinner here, we have no leftovers! So got up hungry this morning and searched thru the fridge for something to make sauce for pasta with. Found a pack of pre cooked chicken sausage. Added some peppers, corn and collards from the garden and we had a terrific pasta dish, and so easy to make it!

1 pound box rigatoni, cooked according to package instructions
4 tablespoons olive oil
2 onions, roughly chopped
6 cloves of garlic, thick sliced
1 green pepper, sliced
5-6 pre-cooked chicken sausage, cut into slices
2 cups collards, thinly sliced
1 cup of wine (red or white, whatever you have opened in the fridge)
1 large can whole peeled tomatoes, crushed in a bowl with your hands
1 teaspoon sugar
1 tablespoon tomato paste
salt and pepper to taste
1 cup corn
fresh oregano, basil, parsley

In a large frying pan or on a dutch oven cook the onions and olive oil for about 5 minutes. Add garlic and peppers and cook for another 5 minutes, stirring so it won't stick. Add chicken sausage and collards and cook for another couple of minutes. Add wine and cook until burned off. Add tomatoes, tomato paste, sugar, salt and pepper. Simmer for 20 minutes.
Add corn and fresh chopped herbs and serve with rigatoni.
