We had a lovely Ham this past sunday's at my Father in Law's and asked him if i could have the ham bone, all i could think of was canellini beans!
The next day we were going up to the Blue Ridge Parkway for a long hike along a creek where hubby would fly fish all day , so i threw the ingredients in the crockpot, so we could have something warm to take with us! You can also slow cook your beans in a regular pot in the stove top, but that takes time and you have to keep an eye on them.
So camp stove, a pot, some bowl and spoons, brie cheese, smoked salmon and prosciutto, and the lovely bean soup, and we were prepared to hike away!
1 meaty ham bone
1lb bag of canellini beans(dry)
1 cup white wine
6 cups water
2 bay leaves
1 large onion, chopped
3 ribs celery, chopped
salt and pepper to taste
4 cups spinach
Place first 7 ingredients in your crockpot, cover it and set to low for 7 hours. When done, remove the bone and shred the meat off it. Place meat and spinach back in soup. Season to taste. Cook for 1 more hour on low. Serve hot.
