A friend of mine from NY suggested i grill my iceberg for a much tastier experience. It took me a while to actually do it, but now I'll do it every time i have iceberg and that i can use the grill, even though it's probably just as good in a grill pan! Thanks Doug for the tip!
1 iceberg, cored and cut into 4 wedges
2 tablespoons olive oil
salt and pepper to taste
1/4 cup parmesan cheese(optional)
garlic vinaigrette or dressing of your choice
Preheat grill or grill pan to high.
Brush wedges on all sides with olive oil and sprinkle salt and pepper.
Place on hot grill, 2 minutes per side. Sprinkle parmesan and dressing of choice.
2 cloves of garlic, crushed
1 teaspoon oregano
1/4 cup white balsamic vinegar
1 tablespoon dijon mustard
1/2 cup extra virgin olive oil
salt and pepper
i use a small mason jar for my dressings. Put garlic, vinegar, oregano, mustard and a pinch of each salt and pepper. Close jar and give a good shake. Add olive oil slowly, cover and shake again. Refrigerate for 2 weeks.
