20 chicken drummettes
3/4 cup mustard of choice, i mixed dijon and grainy
1/2 cup honey
2 cups panko, seasoned with salt and pepper
wing sauce for drizzle
Preheat oven to 350F.
Make your lollipops.
|With a pairing knife, cut thru skin around the top bone|
|This is how it should look! you see that big hunk of fatty skin on top, i snip that|
off with poultry shears and any other unwanted skin!
|Run knife thru the sides, bringing meat to bottom|
|Wrap meat around bottom part|
Dip lollipops in honey mustard and then in panko. Spray olive oil and set on top of a rack in a cookie sheet standing up (bone up).
Bake for 25 minutes. Turn broiler on and place under it for a couple minutes for color. Drizzle wing sauce on top and serve it hot.
