Honey Mustard Chicken Lollipops

Who doesn't love chicken wings! I mean, they are tasty and easy to eat, but can be even easier when you transform your drummettes into lollipops, the whole family will love, including the kids. I drizzle a little buffalo sauce over it, made of half of your preferred hot sauce and half melted butter whisked together, for a little heat.

20 chicken drummettes
3/4 cup mustard of choice, i mixed dijon and grainy
1/2 cup honey
2 cups panko, seasoned with salt and pepper
wing sauce for drizzle

Preheat oven to 350F.
Make your lollipops.

With a pairing knife, cut thru skin around the top bone

This is how it should look! you see that big hunk of fatty skin on top, i snip that
off with poultry shears and any other unwanted skin!
Run knife thru the sides, bringing meat to bottom
Wrap meat around bottom part
Mix honey and mustard well and set in a bowl. Set panko in another bowl.
Dip lollipops in honey mustard and then in panko. Spray olive oil and set on top of a rack in a cookie sheet standing up (bone up).
Bake for 25 minutes. Turn broiler on and place under it for a couple minutes for color. Drizzle wing sauce on top and serve it hot.
