And i know sausage is a little fattening, but i fried it well done and then removed all the grease, before adding the rest of the ingredients. It came out really good and my belly is super happy right now!
1 pound of block sausage(no casing), you can also use a italian sausage with casing cut into slices
1 onion, chopped
6 cloves garlic, chopped
1/2 cup white wine
3 sweet potatoes, peeled and cubed
2 cans chick peas, rinsed and drained
1 large can (64oz) whole peeled tomatoes, i used a quart of home canned tomatoes
4 cups chicken stock
3 sage leaves
3 sprigs thyme
2 bay leaves
2 teaspoon cayenne pepper(optional)
salt and pepper to taste
2 cups baby spinach
In a large soup pan, fry the sausage. If using italian sliced add a splash of olive oil to pan.
Cook sausage until well done, move to the side of the pan. Tilt pan slightly and remove grease and discard it. Add onions and cook for 5 minutes. Add garlic and cook for 1 minute. Add wine and cook for 5 minutes.(it should evaporate). Add sweet potatoes, chick peas and tomatoes. Add chicken stock, herbs and cayenne pepper and bring to a boil. Simmer for 20 minutes. Season to taste and add spinach. Simmer for 15 more minutes. Serve hot with bread.
