I made these potatoes as a side for our prime rib this past weekend and they were perfect. Very crunchy on the outside and soft inside.
2 russet potatoes, washed well and cubed, skin left on
2 tablespoons olive oil
1 tablespoon smoked paprika
1 teaspoon dried thyme
1 teaspoon + 1 tablespoon salt
1 teaspoon pepper
Preheat oven to 400F.
Add 4 cups of water, 1 tablespoon salt and diced potatoes to a pan. Bring to a boil. Lower heat to medium low and simmer for 5 minutes.
Remove from heat and drain potatoes.
In a large bowl whisk together olive oil, smoked paprika, thyme, salt and pepper. Add potatoes and toss well. Pour into a baking dish and bake in preheated oven for 15 minutes. Flip potatoes with a spatula and bake for another 15-20 minutes, until crunchy. Remove from oven and imediatelly drizzle truffle oil over it, don't forget a little goes a long way. Toss it well and serve them hot, warm or at room temperature!
