Long story made short... There's a restaurant in Manhattan... named Rodeo Bar and Grill...Honky tonk... For 15 years we had the most amazing staff and costumers... and then i left... Cowboy kisses is the biggest item in their menu... someone came up with the idea before i worked there, not sure if it was Sal or Cristina...don't care.... they are delicious and I'm sharing them with you!... Or if you are ever in Manhattan around third avenue and 27th street, go in, have a margarita and a order of cowboy kisses... just lovely!!!
Ingredients:
16 jumbo shrimps, peeled and deveined
16 pickled jalapēnos, seeded, washed and sliced in half
16 slices bacon
toothpicks
Chipotle dipping sauce:
1 cup mayonnaise
1-2 chipotle in adobo, seeded and minced
1/2 lime squeezed
Preheat oven to 425F.
Place a shrimp inside the jalapēno and then wrap with bacon. Insert 1 or 2 toothpicks to secure. Do the same with all the shrimp. Place in baking pan. Bake in preheated oven for 20 minutes. Turn broil on and cook under broil for 2-3 minutes until crispy. Serve hot or room temperature with chipotle dipping sauce.
For the sauce place all ingredients in food processor and pulse until combined. you will still have small pieces of chipotle but dipping sauce will turn pink. Serve with shrimp.
