Ginger Cardamon Glazed Carrots

If you are looking for the perfect side dish and one that your kids will eat, try making these delicious carrots. Sweet and tangy and full of flavor.

4 to 6 large carrots, julienned
3 1-inch pieces of ginger
1/2 cup brown sugar
1 1/2 cup water
1 tablespoon ground cardamon
2 tablespoons unsalted butter
1 teaspoon salt

 Place all ingredients in a saucepan. Bring to a boil. Simmer for 10 minutes or until carrots are tender and juice has evaporated. Serve hot as side or by itself as a snack.
