Lemon Poppy Seed Bread with Fresh Lemon Curd

I just love poppy seeds, biting into them, getting them stuck in between my teeth,... and the combination with lemons is perfect!
I was visiting some family earlier today and decided on a lemon poppy seed bread to go with a jar of lemon curd i was bringing them. I delivered the bread missing a slice of course, since I'm a food blogger and needed to taste and photograph the final product!
Later on i wished i had cut 2 slices and left one home for later, but that will just make me bake another one and maybe add different flavors to it! Like i need an excuse!



Ingredients:

3 large eggs
1 1/2 teaspoon vanilla
1/4 cup milk
1 1/2 cups all purpose flour
3/4 cup sugar
1 teaspoon baking powder
pinch salt
1 tablespoon fresh lemon zest
3 tablespoons poppy seeds
1 cup(2 sticks) unsalted butter, melted and cooled

LEMON CURD



Preheat oven to 350F.
Butter and flour the bottom and sides of a loaf pan.
In a small bowl, whisk together eggs, vanilla and milk.
In a large bowl, mix flour, sugar, baking powder, salt, lemon zest and poppy seeds.
Add half the egg mixture and the melted butter to flour mixture and mix until combined. Add the other half of the egg and mix it well.
Pour into prepared loaf pan and bake in preheated oven for 55 minutes.
Remove from oven and pan, and cool on rack for 10 minutes.
Serve with lemon curd or if preferred bring 1/3 cup fresh lemon juice and 1/4 cup sugar to a boil, and stir until sugar is dissolved. Poke small holes on top of bread and slowly pour the lemon simple syrup.
