Marinated Bottom Sirloin

Bottom Sirloin is the larger toughest part of the sirloin, most used for ground beef.
But if marinated overnight, even the toughest bottom sirloin will come out flavorful and tender. Slice it very thin against the grain for an even tender bite.
This is a perfect marinate for steak. Wine and soy sauce, herbs and garlic.
The pictures show some medium rare and some medium.

 1 1/2 to 2 lb bottom sirloin
1 cup soy sauce
1 cup red wine
1/4 cup white vinegar
3 garlic cloves, smashed
2-3 sprigs thyme
1 teaspoon pepper
1 teaspoon salt

Whisk together all ingredients, but the meat in a bowl. Place the meat in a large ziplock bag and pour marinate over it. Refrigerate overnight.

Remove from fridge 2 hours before cooking. This will bring the meat to room temperature for even cooking.
Preheat your gill to high. Place meat in grill, cover, and cook for 5 minutes a side for medium rare and 8 minutes a side for medium. Remove from grill and let meat rest for 5-10 minutes. Thin slice across the grain and serve warm. It's great topped with a little chipotle butter.
