Being that it's been citrus season and i always have bags and bags of citrus at home, i end up with different types of curd in the fridge. And thought that the lemon went really well with this bread. Or eat it just plain!
3 or 4 ripe bananas, mashed
1/3 cup melted unsalted butter
1/2 cup demerara sugar
1/2 cup agave
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
3/4 cup all purpose flour
3/4 cup old fashioned oats
Preheat oven to 350F. Butter and flour a loaf pan.
In a large mixing bowl, whisk together mashed bananas and melted butter. Add sugar, agave, egg and vanilla. Mix it well with a wooden spoon. Add baking soda, salt, oats and flour and mix it in. Pour mixture into prepared pan and bake for 1 hour. Remove from pan and cool on a rack for 10 minutes. Slice and serve at room temperature.
