It's been 5 days since i posted a recipe, have been trying to get stuff done around the house and also getting our yard and garden ready for spring.
Serve it with some fresh creme anglaise or just a little fresh agave sweetened wiped cream!
1 tablespoon unsalted butter, room temperature
3 large eggs, room temperature
1/3 cup + 1 tablespoon sugar
3 tablespoons almond meal
3 tablespoons all purpose flour
1 1/2 cup heavy cream
1 teaspoon vanilla extract
1 tablespoon orange juice
1/4 teaspoon salt
2 tablespoons orange flavored liqueur(i.e. grand marnier)
2 cups raspberries, fresh or frozen
1 tablespoon orange zest
confectioner's sugar for dusting
1/3 cup toasted slivered almonds(toast in baking dish at 400F for 3-5 minutes)
Grease the bottom of a 10inch tart or pie dish with the butter. Sprinkle 1 tablespoon sugar over butter.
Preheat oven to 375F.
In a large bowl whisk together eggs and 1/3 cup sugar until creamy and pale. Add flour, almond meal, heavy cream, vanilla, orange juice, salt and liqueur. Whisk well until combined and set aside for 5 minutes.
Place raspberries and orange zest on buttered dish. Pour cream mixture over it and sprinkle with toasted almonds.
Bake in preheated oven for 30 to 35 minutes, or until custard is firm and golden brown.
Serve warm or at room temperature dusted with confectioner's sugar and fresh wiped cream.
