Baked Yuca Fries with Cilantro Honey Mustard

I had been craving yuca for a while and couldn't find any around here, so when my Mom's friend that lives in Florida, Tia Marilene heard about that, right away she put 2 beautiful yucas in a fedex box and shipped it to me.
I wanted to do so many different things with them, but decided on a simple and easy way. We grew up eating it deep fried, but since i don't really agree with anything deep fried, i boiled and baked them. Served with cilantro honey mustard and ketchup.

Ingredients:
2 yucas, peeled and cut into 3 sections
salt
olive oil

cilantro honey mustard:
2 tablespoons mustard
2 tablespoons honey
1 tablespoon cilantro, finally chopped


Preheat oven to 400F.
Place yuca sections in a large pot, filled with salted water and bring to a boil, simmer for about 15 minutes, it should be very soft. Drain yuca and cut each section in half. Remove the hard thread in the middle of yuca. Cut each half into wedges.


Place yuca in a baking sheet and spray with olive oil.Bake in preheated oven for 10 minutes. Flip and cook for another 10 minutes. Sprinkle sea salt while hot and eat with favorite dipping sauce.
For cilantro honey mustard sauce, mix all ingredients well and serve with yuca fries.
