It came out amazing, very moist from the yogurt with a little crunchiness from the flax seeds and the apples. Perfect combination!

2 cups all white whole wheat flour
1 cup demerara sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup unsalted butter, melted
2 bananas, very ripe, mashed
1 small apple, peeled, cored and shredded
1 (6 ounce) apple cinnamon Chobani greek yogurt
1/2 cup golden flax seeds
1 teaspoon vanilla extract
Preheat oven to 350F.
Grease with butter or cooking spray and flour a 8 1/2x4 1/2 loaf pan.
Combine flour, sugar, baking soda, salt and flax seeds in a large bowl. In a separate bowl combine butter. eggs, bananas, apple, yogurt and vanilla. Fold dry ingredients into wet ingredients.
Pour batter into prepared pan. Bake in preheated oven for 50-60 minutes or until a toothpick inserted in the center of bread comes out clean. Cool 5 minutes in pan. Remove from pan and cool completely on a wire rack.
