1 can black bean, rinsed and drained
1 can corn, drained
2 roma tomatoes, seeded and chopped
1 small white onion, chopped
1 handful cilantro, chopped ( i like a lot, but you can add as much as you like)
1 tablespoon red wine vinegar
1 lime, juiced
2 tablespoons olive oil
salt and pepper to taste
Mix all ingredients in a large bowl. Season to taste. Refrigerate for 2 hours before serving.
