Brisket Tacos

Tacos are the perfect meal, just about anytime. you can do egg tacos for breakfast, grilled veggie tacos for lunch and nice grilled or slow cooked meat tacos for dinner. You can stuff just about anything from your pantry or fridge inside a tortilla and it's tasty!!!

For the brisket:
3 lb brisket, seasoned with salt and pepper
2 tablespoons olive oil
1 onion, chopped
6 cloves garlic, sliced
2 bay leaves
1 teaspoon cumin
1 teaspoon salt
1 teaspoon pepper
1 bottle of ale(beer)
1 cup beef stock
2 cups water

For the tacos:
Shredded brisket
Salsa Verde
Red Cabbage and Radish Slaw
1 avocado, pitted and sliced
1/2 cup pickled jalapeno
12 small flour tortillas
1 lime , quartered

Heat olive oil in a large frying pan.
Brown seasoned brisket on all sides. Transfer to a slow cooker or a dutch oven and add all other ingredients. For the slow cooker set it to low for 10 hours. For the dutch oven, cook on a 250F preheated oven for 6 hours.

Remove from broth and shred all the meat, this should be very easy if cooked perfectly.
Heat tortillas in microwave for 30 seconds. Top them with red cabbage and radish slaw, avocado slices, pickled jalapeno and salsa verde. Serve immediately with lime wedges.
