Caramelized Onion and Fresh Oregano Zucchini

This is one of my favorite ways of eating zucchini, melt in your mouth and full of flavor.
Perfect side to grilled chicken in the hot months when the zucchinis are tasty and fresh.

Ingredients:
3 zucchinis, sliced
1 tablespoon olive oil
1 teaspoon sugar
1 onion, roughly chopped
1 tablespoon chopped oregano
salt and pepper to taste




In a small saucepan, heat the olive oil. Add onions and sugar and cook on low for 25 minutes, until onions are turning golden. Add zucchini and cook 5 minutes on medium low. Add fresh oregano and season to taste. Cover and cook another 5 minutes until zucchini is soft.
Serves 4 as a side.
