Beef Barley Soup

You can go wrong with barley, the stuff is good for you, it tastes good and you can make beer out of it!!!
In this case i made a soup with beer and YUMMM!
We had a few cold days last week in the middle of the spring, so soup, red wine and a fire were on our menu every day!

1 cup barley
1 onion, chopped
2-3 tablespoons olive oil
4 cloves garlic, sliced
2 large carrots, cut into small pieces
2 ribs celery, cut into small pieces
1 lb sirloin, cut into small pieces
1 ale beer
48 oz beef stock
2 bay leaves
1 lb baby bella mushrooms, sliced

Place barley in a bowl and cover water, soak for 1 hour while cooking the soup.
Heat 2 tablespoons olive oil in a large soup pan. Add onions and cook until translucent. Add garlic, carrots and celery and cook for about 5 minutes. Remove veggies from pan and add a little more oil.
Add beef and fry it well on all sides. Return veggies to pot and add beer, stock and bay leaves. Bring to a boil and simmer for 1 hour.

Drain barley(it should have doubled in size), and add to soup. Add mushrooms and simmer for 30-45 minutes. Season to taste. Serve hot with fresh sliced sourdough bread.
