Beet Chips

Beets are one of those vegetables that most people i know don't like it and i absolutely love it!
I love it roasted, boiled, shredded raw in a salad or juiced. And now my new favorite, baked into chips.
Beets have many healthy benefits and should be eaten often. It's beet season in the US, so go hit the farmer's market and pick up some of these beauties and bake them into chips, you won't regret it!
You can do the same with baked potato chips and even add different spices for different flavors!

Ingredients:
3 large beets or 8 small colored ones
2 teaspoons olive oil
1 teaspoon salt
1 teaspoon pepper
2 rimmed baking sheets


Preheat oven to 350F.
Peel raw beets and with a mandoline slice beets 1/16 inch thick. Toss beets with olive oil, salt and pepper.
These were used for roasting( a little thicker)
Arrange beets in a single layer in one of the baking sheets. Stack the other baking sheet on top of the beets. Bake for about 15-20 minutes. Uncover, rotate beets from outside to inside of baking sheet and bake 10 to 20 minutes, remove the chips as they became lightened in color. Transfer to a wire rack to cool and crisp.

  1. Golden beets ROCK!! It took a Chef making me try a beet, to seriously after 30+ years to enjoy a beet:-) I was missing out:-) I hate canned beets though, my Mom only ate canned beets...yuck! Your chips look delicious, fun, and easy to make:-) Hugs, Terra
