Garden Fresh Pasta

This is my son's favorite meals during the summer months and i do love it also, but try not to make it as much, since that much sausage doesn't agree with me always.
You can add different garden veggies that you have handy. i like zucchini, cherry tomatoes,  broccoli, arugula, but you can add diced peppers, corn, eggplant, different squashes and it will be great!

1 lb block sausage( no casing)
6 cloves garlic, sliced
2 lemons, juiced and zested
2 cups broccoli, cut into small pieces
1 large zucchini, diced
1-2 tablespoons olive oil
1 cup arugula
1 cup spinach
1 cup cherry tomatoes, sliced in half
handful fresh herbs( oregano, parsley, basil)
salt and pepper to taste
Pasta of choice, cooked according to package instructions

Cook sausage till well cooked breaking down big lumps as you cook it. Should take about 15 minutes. Add garlic and cook for a couple of minutes. Add lemon juice and zest. Add Broccoli, zucchini and olive oil. Cook covered for 10 minutes, until veggies are somewhat softened. Add arugula, spinach, tomatoes and herbs. Season to taste. Toss with hot pasta and serve immediately.
