Have you tried to buy a pack of kale chips at the grocery store? Don't get me wrong, they are delicious, but at $7.00 for a small pack, there's no way i'm not gonna make this myself, especially with the farmer's market packed with kale now! And it's sooo easy! Spice it up whatever way you like and it's a great snack!

1 bunch kale
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon crushed red pepper
pinch of salt
pinch of pepper
Preheat oven to 300F.
Remove hard middle part of kale leaves. Wash and pat dry with paper towels. Cut into small pieces.
In a large bowl, whisk together olive oil, smoked paprika, crushed red pepper, salt and pepper. Add kale pieces to bowl and toss well.
Place kale pieces in cookie sheets and bake for 20 minutes. Check half way thru the cooking time to make sure the pieces on the outside are not burning. you might want to flip them around at that point (middle to outside and outside to middle). Eat plain or crumble on top of pastas or salads.
