Pan Fried Tilapia with Horseradish and Caper Beurre Blanc

I love tilapia, it's a very friendly fish when you have children. It's perfect for tacos or just pan fried and served with a salad.
This time i used bread crumbs instead of AP flour and made a spicy beurre blanc to go with it. Perfection in every bite!!

Ingredients:
6 tilapia fillets
salt and pepper to taste
1 lemon
1/2 - 1 cup bread crumbs
olive oil

beurre blanc:
1/8 cup white wine vinegar
1/8 cup dry vermouth
1/2 tablespoon chopped shallots
1 tablespoon pepper
8 tablespoons salted butter, cold, cut into 1 inch pieces
2 tablespoons horseradish
1 tablespoon capers

In a small pan, heat vinegar and vermouth. Do not boil. Add shallots and pepper and cook over low heat. Move pan away from heat and whisk in 2 pieces of butter until melted. Return pot to low heat and whisk in the rest of the butter, 2 pieces at a time. When all butter is melted, whisk in horse radish and add capers. Seat aside.

Place bread crumbs on a large plate. Sprinkle salt, pepper and lemon juice over all the tilapia. Cover tilapia all over with bread crumbs.

Heat 1-2 tablespoons olive oil in a frying pan. Pan fry fish for about 3 minutes a side or until flaky. add more olive oil if needed for the the rest of the fish. Serve with warm sauce.
