Zucchini and Chocolate Bread

About a little over a month ago i met up with Carrie from Carrie's Experimental Kitchen and Lauren from Lauren Kelly Certified Nutritionist for a food bloggers convention in NYC, and as we get there Carrie surprised us with a slice of a delicious chocolate Chip Zucchini Bread she had baked for us. I have never thought of chocolate and zucchini together, but apparently it's a common recipe and i really liked it! So i used my "go to" zucchini bread recipe and added chocolate chips and it was perfect!
And it's the perfect excuse to use up some of the 20 zucchinis coming in from the garden every other day!!!!

3 eggs
1 cup of vegetable oil
1 3/4 cup of sugar
2 cups of shredded zucchini
3 cups of al purpose flour
1/2 teaspoon of nutmeg
1 teaspoon of baking soda
1/2 teaspoon of baking powder
1 teaspoon of salt
1 cup of chocolate chips

Preheat oven to 350F.
Grease and flour 2 loaf pans.
In a large mixing bowl, whisk together eggs, oil and sugar. Add zucchini and fold it in.

In a separate bowl sift together flour, nutmeg, baking soda, baking powder, salt and chocolate chips.
Fold dry ingredients into wet ingredients and pour into prepared loaf pans. Bake for 1 hour or until a toothpick inserted into the center of the bread comes out dry.
Let it cool down on a rack.

  4. Very good! I have 2 big zucchinis in my fridge and I've seen this kind of bread in several places. This one, with chocolate chips, looks delicious!
