Spinach, Chick Pea and Tarragon Patties topped with Fresh Tomato Sauce

I have been so late in posting recipes, i truly apologize... end of summer, looking for the perfect space for my business, a trip to Brasil are just a few of my excuses! But I am here mow and hopefully with my blogging juices running, since i have tons of recipes and pictures to post!
I made this patties a month ago and they were a hit with family and friends. I had made some fresh meat sauce and a marinara sauce and they were both delicious with the patties!

1 - 15.5oz can of chick peas (garbanzo beans)
2 cups fresh spinach
2 tablespoons fresh tarragon roughly chopped
1/4 cup extra virgin olive oil or more if needed
1 teaspoon pepper
1 teaspoon salt
tomato sauce
meat sauce

Lightly grease a large cookie sheet.
Preheat oven to 375F.
Place chick peas, spinach, tarragon, olive oil, salt and pepper in the bowl of a food processor and pulse until pureed, if too thick add a little more olive oil.
Scoop out about 1 tablespoon of the mixture and roll it with your hands, flatten it and place on prepared baking sheet. It should make 12-14 patties. Bake in preheated oven for 15 minutes. Flip them and bake another 10 minutes. Serve warm or at room temperature with your preferred sauce on top.
