It was lunch time on a monday; we had guests coming for grilled pizzas that evening, and even though this day i was busy prepping for my delicious pizzas, where everything is made from scratch, i still wanted more... i wanted to create, and i was hungry(as usual-LOL)! Looked thru my freezer and found some ahi tuna that i had picked up at the coast the month before, and was about to just sear and serve it that way when i decided i need a different way to cook that tuna. Poaching came to mind and as i looked at my counter and there were a half dozen bottles of olive oil, i decided to poach it in olive oil, after i rubbed enough miso paste all over it! I topped the plate with a poached egg and it was simply amazing!!!!

Ingredients for 4:
4 ahi tuna steak
2 cups olive oil
2 tablespoons miso paste
1 tablespoon sesame seeds
salt and pepper to taste
Garlic and Mustard Infused Very Creamy Sweet Potato Puree:
2 medium sweet potatoes, peeled and cubed
4 tablespoons butter, separated
2 cloves garlic, chopped
2 tablespoons grainy mustard
1/2 cup half & half
4 poached eggs
Start by adding the sweet potatoes to a pan. Add a teaspoon of salt and cover potatoes with water. Bring to a boil, and simmer for 15-20 minutes until potatoes are very soft. Drain and set aside.
Preheat oven to 180F. Fill up deep oven safe pan with olive oil and place in oven for 5 minutes. Rub tuna steaks with salt, pepper, sesame seeds and miso paste. Add tuna steaks to warm olive oil and place in preheated oven for 3-5 minutes, medium rare to medium well.
While tuna is in oven, heat 1 tablespoon butter and add garlic to it. Cook until golden, about 1 minute. Add mustard and cream and pour it inside a food processor with cooked potatoes and remaining butter. Pulse until creamy. Season to taste with salt and pepper.
Carefully remove tuna from olive oil. Let it rest for a few minutes. Slice tuna and serve over mashed sweet potatoes and top with a poached egg.
Let oil cool down and filter thru a paper towel for another use.
